Vegan Chocolate Chip Cookies

Vegan Peanut Butter Chip Cookie

Ingredients

  • ½ cup butter (Earth Balance)
  • 1 cup brown sugar
  • ¼ cup soy milk
  • 2 cups all purpose flour
  • 1 Tbsp vanilla extract
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp cornstarch
  • ½ tsp salt
  • 1 cup chocolate chunks

Instructions

  1. Preheat oven to 350°F
  2. Cream butter and sugar together in electric mixer
  3. Add soy milk and vanilla, mix to combine
  4. Add flour, baking powder, baking soda, cornstarch, and salt - mix until combined
  5. Check dough consistency - it should be thick but holdable. Add small amounts of soy milk if too dry, or flour if too wet
  6. Fold in chocolate chunks
  7. Roll into balls and place on parchment-lined baking tray
  8. Bake 13-15 minutes until edges are lightly golden (check at 11 minutes)
  9. Let cool on wire rack

Makes approximately 12 cookies
